Sand Sole

Another beautiful British Flat Fish species, but without the reputation of the Dover or Lemon. Why? No idea. Like a Dover, their fillets can absorb a fantastic amount of flavour just with a bit of butter and salt in a hot pan. I think it's about time these fish deserved their 15 minutes of fame! Each fish comes skinned and perfectly trimmed ready to go straight into your pan.
